Robyns Best Ginger Biscuits

If you are lucky enough to see us at a farmers market, we will often request our good friend Robyn to make these amazing ginger biscuits, which will often pop up on the menu at Indulge or as part of their cakes and other wonderful creations. They are to die for! 

INGREDIENTS

500g butter

1 cup sugar

4 cups self raising flour

2 tsps vanilla

1 tin (395gms) condensed milk

300g chopped ginger bites

3 tsp ground ginger

 

METHOD

Cream butter and sugar together.

Add flour, milk and ginger.

Mix until a soft dough.

Roll into logs in greaseproof paper, freeze until firm for 30-40 minutes.

Slice up and place on trays and bake for 15-20 minutes at 180 degree.
